📝 Ingredients:

For the beef layer:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes (drained slightly)
  • 1 (8 oz) can tomato sauce
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

For the creamy layer:

  • 1 cup sour cream
  • 4 oz cream cheese (softened)
  • 1/2 cup chopped green onions (optional)

For the pasta & topping:

  • 8 oz egg noodles (or elbow macaroni), cooked and drained
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella (optional for extra gooeyness)

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the beef mixture:
    • In a large skillet, brown the ground beef with diced onion over medium heat until fully cooked. Drain excess fat.
    • Add garlic, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Let simmer for 10–15 minutes.
  3. Make the creamy layer:
    • In a medium bowl, blend sour cream, cream cheese, and green onions until smooth.
  4. Assemble the casserole:
    • Spread half the cooked noodles in the bottom of the dish.
    • Dollop and spread half of the creamy mixture over the noodles.
    • Add half the meat sauce.
    • Repeat layers with remaining noodles, cream mixture, and meat sauce.
    • Sprinkle cheddar (and mozzarella, if using) evenly over the top.
  5. Bake uncovered for 25–30 minutes or until cheese is bubbly and golden.
  6. Let rest 5–10 minutes before serving.
