Marinated Cucumbers, Onions, and Tomatoes

Ingredients:

  • 2 medium cucumbers, thinly sliced
  • 2 medium tomatoes, cut into wedges or chunks
  • 1 small red or yellow onion, thinly sliced
  • 1/4 cup vinegar (white, apple cider, or red wine vinegar work well)
  • 1/4 cup water
  • 2 tablespoons olive oil
  • 1 tablespoon sugar (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: fresh herbs like dill, parsley, or basil

Instructions:

  1. Combine veggies: In a large bowl, mix the sliced cucumbers, tomatoes, and onions.
  2. Make the marinade: In a separate bowl or jar, whisk together the vinegar, water, olive oil, sugar, salt, and pepper until well combined.
  3. Marinate: Pour the marinade over the vegetables and toss gently to coat.
  4. Chill: Cover and refrigerate for at least 1–2 hours (or overnight for deeper flavor).
  5. Serve: Toss again before serving. Garnish with chopped fresh herbs if desired.

This dish can be stored in the fridge for up to 3 days and often tastes even better the next day as the flavors develop.
