Instructions:
- Combine veggies: In a large bowl, mix the sliced cucumbers, tomatoes, and onions.
- Make the marinade: In a separate bowl or jar, whisk together the vinegar, water, olive oil, sugar, salt, and pepper until well combined.
- Marinate: Pour the marinade over the vegetables and toss gently to coat.
- Chill: Cover and refrigerate for at least 1–2 hours (or overnight for deeper flavor).
- Serve: Toss again before serving. Garnish with chopped fresh herbs if desired.
