
Avocado & Boiled Egg Salad
Ingredients:

1–2 ripe avocados, diced

2 boiled eggs, chopped or halved

Cherry tomatoes, halved

Red onion, chopped

Fresh parsley or cilantro, finely chopped

Salt, pepper, chili powder (optional)

Lemon or lime juice

Instructions:
Mash or cube avocado in a bowl.
Add tomatoes, onion, parsley, and eggs.
Season with salt, pepper, and lemon juice.
Toss gently & enjoy immediately!
