
Crustless Spinach, Tomato & Feta Quiche
1 cup fresh spinach, chopped
½ cup cherry tomatoes, halved
½ cup crumbled feta cheese
4 large eggs
½ cup milk
Salt & pepper to taste
1 tsp olive oil
Preparation:
Preheat oven to 375°F (190°C). Grease a 9-inch pie dish with olive oil.
In a bowl, whisk eggs, milk, salt, and pepper.
Spread spinach, tomatoes, and feta in the dish. Pour egg mixture over the top.
Bake for 30–35 minutes, or until set and lightly golden.
Cool slightly before slicing. Serve warm or chilled.
