Lightly fry 10-12 white corn tortillas to give them structure. In an 8-inch cast iron pan, layer the tortillas with 1 cup of roasted, peeled, chopped Hatch green chiles, 3/4 cup each of grated cheddar and Monterey Jack cheese, and 1/2 cup of chopped white onion. Add 2-3 minced garlic cloves and season with Mexican oregano, pepper, and garlic salt to taste. Bake at 375°F for 30 minutes until the cheese is melted and bubbly. Enjoy this flavorful dish!
