
– 3 large potatoes, grated

– 300 ml milk
– 200 g wholemeal flour
– 2 tsp baking powder

Directions:
1. Preheat the oven to 180°C (350°F). Grease a baking dish with olive oil.
2. In a large bowl, combine the grated potatoes, onion, carrot, bell pepper, eggs, milk, wholemeal flour, baking powder, and salt. Mix well to combine.
3. Heat olive oil in a pan over medium heat. Add the potato mixture and cook until the bottom is golden brown. Flip and cook the other side until golden brown as well.
4. Transfer the cooked potato mixture to the prepared baking dish. Top with grated cheese and bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
5. Garnish with fresh chives before serving.
