Spinach, Feta, and Sun-Dried Tomato Egg Muffin Cups

Ingredients:

6 large eggs

1/2 cup spinach, chopped

1/4 cup feta cheese, crumbled

1/4 cup sun-dried tomatoes, chopped

1/4 tsp garlic powder

Salt and pepper to taste

Olive oil spray

Preparation:

Preheat oven to 375°F (190°C) and spray a muffin tin with olive oil.

In a bowl, whisk together eggs, garlic powder, salt, and pepper.

Stir in chopped spinach, feta, and sun-dried tomatoes.

Pour the mixture evenly into the muffin cups, filling each about 3/4 full.

Bake for 18-20 minutes, or until eggs are set and lightly golden.
