
Tomato & Cucumber Basil Salad



Ingredients (Serves 2–3)

3 medium tomatoes, cut into bite-sized chunks

1 large cucumber, thinly sliced

½ small red onion, thinly sliced

10–12 fresh basil leaves, roughly torn

2 Tbsp extra-virgin olive oil

1 Tbsp fresh lemon juice (optional)

Salt, to taste

Freshly ground black pepper, to taste
Instructions
Prep the produce
Rinse tomatoes and cucumber under cold water.
(Optional) Peel half the cucumber skin for a mix of texture.
Chop & assemble
Place tomato chunks, cucumber slices, and red onion in a large bowl.
Add torn basil leaves.
Dress the salad
Drizzle with olive oil and lemon juice (if using).
Season with salt and pepper.
Toss gently
Using a wooden spoon, stir gently to avoid breaking up the tomatoes.
Serve
Transfer to a serving plate and enjoy immediately.
Great alongside grilled meats, fresh bread, or as a light starter.
