Ingredients:
1 large egg
1/4 cup fresh chives, chopped
2 cups mashed potatoes (preferably cooled)
1/4 teaspoon garlic powder
2 tablespoons all-purpose flour
1/2 cup shredded cheddar cheese (optional)
Salt and pepper, to taste
2 tablespoons olive oil (or butter) for frying

Instructions:
1. In a large mixing bowl, combine the cooled mashed potatoes, chopped chives, shredded cheddar cheese (if you’re using it), the egg, flour, garlic powder, salt, and pepper. Mix everything together until the ingredients are evenly incorporated.
