Avocado Toast with Feta, Tomatoes, Cranberries & Walnuts

Ingredients:

2 ripe avocados, halved and pitted

2–4 slices sourdough bread, toasted

1 cup cherry tomatoes, halved

½ cup feta cheese (especially the kind soaked in olive oil—yum!)

¼ cup dried cranberries, chopped

¼ cup walnuts, chopped

1–2 teaspoons lemon juice

Salt and pepper, to taste

Fresh herbs (optional): chopped parsley or basil for garnish

Directions:

Prep the Avocado:
Scoop out the avocado flesh into a bowl. Mash with a fork for a rustic texture or slice it if you prefer it whole. Add lemon juice, salt, and pepper to taste. Give it a light stir to combine.

Toast the Bread:
Toast the sourdough slices until golden and crisp around the edges, but still soft in the center. This will hold all your toppings without getting soggy.

Assemble the Toast:
Spread the mashed or sliced avocado evenly onto each piece of toasted sourdough.

Add the Toppings:
Layer on the halved cherry tomatoes, crumbled feta cheese, chopped dried cranberries, and chopped walnuts. Drizzle with a little extra olive oil from your feta jar if you like!

Garnish & Serve:
Sprinkle with fresh herbs if using. Serve immediately while the toast is warm and the toppings are fresh!
